Mini Chocolate Chip Cookies

Soft in the center, lightly crisp around the edges, and loaded with melty chocolate, these little cookies are the kind you make once and then memorize. A quick chill gives them the perfect texture, and a sprinkle of flaky salt on top takes them from nostalgic to bakery-level good!
Prep Time: 40 minutes (30 minutes chill time + prep)
Bake Time: 5-7 Minutes
Total Time: 45 minutes
Yield: 40 cookies
Ingredients:
1 stick unsalted butter (softened)
1/2 cup packed light brown sugar
1 l/2 cup pure cane sugar
1 teaspoon of vanilla extract
2 eggs
2 cups of all-purpose flour (GF is fine too)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cornstarch
Chocolate chips- measure with your heart
Directions:
Mix all wet ingredients.
Mix in salt and baking soda.
Add flour and mix.
Add chocolate chips, and gently stir in.
Chill the dough for at least 30 minutes.
Roll the dough balls out slightly larger than a quarter.
Add more chocolate chips and Maldon salt on top of the rolled cookies.
Bake at 375° for 5-7 minutes.
Transfer cookies to a cooling rack.
