Warm Feta Zucchini Salad
This warm salad is perfect for the days when you want something healthy, but you also want comfort food. The building of the salad lends to a melted feta cheese dream. Make this once and you’ll be making it again and again.

Cook time: 15 minutes
Ingredients:
1 tsp olive oil
1 shallot, diced
2 cloves of garlic, minced
1/4 teaspoon smoked paprika
2 zucchini, quartered
S&P to taste (go slightly lighter on the salt as feta will bring salt to the dish also)
1/4 cayenne pepper, optional
2 cups of Arugula
half a package of sliced shiitake or baby Bella mushrooms
crumbled feta cheese
Directions:
Chop shallot, zucchini, and garlic cloves.
Bring your skillet to medium heat, adding olive oil once the pan is hot.
When you see the oil glistening, bloom the spices by adding paprika and cayenne pepper if using, stir spices into the hot oil for 30-45 seconds.
Next, add shallot, and cook for 1-2 minutes before adding minced garlic.
Next, add chopped zucchini. Allow it to cook down for 4-5 minutes.
Finally, add mushrooms and cook for another 3.
Once finished, turn off the heat and add arugula to the bowl, followed by feta cheese, and top with the zucchini-mushroom mixture.
Add dressing and enjoy!
*Top with whichever dressing you prefer. I personally go with my homemade ranch dressing on this one.
