Strawberry Mousse Parfait
Light, luscious, and layered with love, these individual strawberry mousse parfaits are
what summer dreams are made of. A buttery graham cracker crust, creamy strawberry
mousse with a tangy twist, and soft whipped cream on top. Elegant enough for guests,
but easy enough for a Tuesday.

Total: 3 and 15 minutes with chill time
Yield: 6 servings
Ingredients:
Mouse:
8-10 fresh strawberries plus 8 more for garnish
1 teaspoon vanilla bean paste or extract (1:1)
8 ounces cream cheese (1 package, room temperature)
3/4 cup Greek yogurt
3/4 cup powdered sugar
4 graham crackers
Whipped cream:
-1 cup heavy whipping cream
-1/2 teaspoon vanilla bean paste or extract (1:1)
-3-4 tablespoons powdered sugar
Directions:
For the Mouse
1. Cut the tops off of 8-10 strawberries and add to a blender with vanilla bean paste or
extract.
2. Once the strawberries reach a pureed state, add cream cheese, Greek yogurt, and
powdered sugar, then blend into a smooth mixture.
Cup Assembly
1. Crush 3-4 graham crackers in a sandwich bag, adding 1-2 tablespoons into the
bottom of a glass jar (I used recycled Oui yogurt jars).
2. Slice 6 strawberries thinly. You’ll want to aim to get 4 thin slices for the outside of
each jar (1 strawberry per jar).
3. Arrange the slices around the jar before pouring the mouse mixture into each jar,
leaving a little bit of room at the top.
4. Cover with plastic wrap and place into the refrigerator for at least 3 hours, giving the
mixture time to settle.
Whipped cream:
1. Add 1 cup heavy whipping cream, 1 tsp vanilla bean paste or extract, and 3-4
tablespoons of powdered sugar into a large bowl and whip with a whisk attachment
until stiff peaks form.
2. Place whipped cream into a piping bag and pipe over the top of the chilled Mouse
cups.
3. Garnish with graham cracker sprinkles and a sliced strawberry or mint leaf.
