S’mores Bites

I started making s’mores bites because we love roasting marshmallows around the campfire, but quickly realized that having a bunch of little kids around a roaring fire was not the most relaxing activity.
When we entertain, our kids always ask to make s’mores with their friends, and this was my solution. No mess, no risk of getting burned, and they’re the perfect nostalgic addition to any dessert table!
Prep: 15 minutes
Total time 25 (with chilling time)
Servings: 8-10
Ingredients:
-1 box of graham crackers
-1/2 cup marshmallow fluff
-16 ounces milk chocolate chips
-1/4 teaspoon coconut oil
-flakey sea salt (garnish)
Directions:
Break all Graham crackers into quarters and set them to the side.
Make marshmallow fluff (see directions below).
Spread a thin layer of fluff down the middle of 1/4 graham cracker and top with another cracker. Continue this step until you’ve made the amount you need.
Melt chocolate in 30-second increments (don’t go over 1:30) and add coconut oil to the chocolate mixture.
Dip one half of each marshmallow graham cracker sandwich into the chocolate and set on parchment paper and a baking sheet.
Sprinkle with flaky salt
Place the finished s’mores bites into the refrigerator for 10-15 minutes.
For Marshmallow Fluff:
Ingredients:
- ¼ cup cool water
- 1 tablespoon gelatin (I used unflavored grass-fed)
-1 cup granulated sugar
- 6 tablespoons of water
- 1 tablespoon honey
-1/2 teaspoon vanilla extract
Directions:
1. Stir together gelatin and 1/4 cup cool water in a large mixing bowl and set aside.
2. Combine sugar, water, honey, and vanilla in a saucepan.
3. Bring to a boil, and as soon as ingredients are incorporated, take the saucepan off the heat.
4. Using a whisk attachment on your stand or hand mixer, start on a low speed and slowly pour the hot syrup over the gelatin in the large mixing bowl.
5. When the ingredients have combined, turn the speed to high, and you'll have the white marshmallow fluff in a few minutes.
