Easy Homemade Mayonnaise

When heirloom tomato season hits, the BLT sandwiches are made at a high clip in our house. The glue holding the perfect BLT together is this homemade mayonnaise recipe that takes less than five minutes to make. It’s creamy, tangy, and the ideal addition to any summer sandwich or pasta salad. 

Mayonnaise Recipe:

Prep Time: 2 minutes

Emulsify time: 50 seconds

Ingredients:

-1 egg at room temperature 

-1 cup avocado oil

-1/2 tablespoon of fresh lemon juice (room temp)

-1/2 teaspoon salt

-1 teaspoon ground mustard

Directions:

  1. Grab your eggs and lemons out of the fridge ahead of time to ensure they’re at room temperature. 

  2. Crack your egg into a 16-oz. wide-mouth mason jar

  3. Add lemon, oil, salt, and ground mustard

  4. Make sure your emulsifier’s blade covers the egg yolk and turn the speed to high. 

  5. Keep the blade in place for ten seconds before tipping the blade up slightly to allow more oil to come in. Blend until thick. 

BLT Directions:

  1. Season your sliced heirloom tomatoes with flaky salt, pepper, and red wine vinegar.

  1. Bake bacon slices at 400 degrees F for 8-10 minutes until crispy.

  2. Butter the bread and toast each side.

  3. Make your mayonnaise (see directions above) and spread a thick layer on each untested side. 

  4. Season the mayonnaise layer with oregano before adding lettuce, tomato, and bacon. 

  5. Slice and serve.
