Hot Honey Goat Cheese Stuffed Dates
This is one of those recipes that feels a little chefy but is honestly so simple to pull off. You’ve got naturally sweet, caramel-y dates stuffed with whipped goat cheese, wrapped in crispy prosciutto, and finished with a warm drizzle of hot honey for that perfect sweet-heat moment. It’s rich, salty, creamy, and just a little spicy, all in one bite. These are the kind of appetizers that look impressive on the table but disappear in minutes, whether you’re hosting or just making something fun for yourself.
Prep Time: 5 minutes
Bake time: 10 minutes
Total Time: 15 minutes
Ingredients
12 pitted dates
6 slices of prosciutto, halved
one 4-ounce log of goat cheese
1 tablespoon milk
¼ teaspoon white pepper
thyme
2 tablespoons honey
½ tablespoon hot sauce
Directions
Set your oven to 375 degrees F. Line a baking sheet with parchment paper and slice your prosciutto in half. Open your dates and set them aside.
Add the goat cheese, milk, white pepper, and a teaspoon of thyme into your food processor and whip it for about 1 minute.
Fill one side of each date (overfilled is fine) before closing it and rolling it into the prosciutto slices. Place your stuffed dates on your baking tray.
Bake the dates until the prosciutto is crispy, about 10 minutes.
While the dates bake, make your hot honey by adding two tablespoons of honey to a bowl, microwaving for 20-30 seconds to make it easier to work with.
Add ½ a tablespoon or more to taste of hot sauce and mix well.
Once dates are finished baking, drizzle with hot honey and garnish with more thyme leaves.
