Clean Protein Bars

If you’re looking for a protein-packed snack that actually tastes like a treat, these homemade bars hit that sweet spot. Made with creamy cottage cheese, rich chocolate, and naturally sweetened with maple syrup or honey, they deliver a smooth, dessert-like texture without being overly heavy. Each bite balances indulgence and nutrition, making them ideal for a quick pre-workout boost, a post-gym refuel, or even a late-night snack straight from the freezer.

Recipe makes 12 bars

Ingredients

1 cup cottage cheese

1 tsp vanilla extract

2 scoops unflavored protein powder

1.5 tablespoons maple syrup, honey, or blue agave

1 cup almond flour

¾ cup chocolate chips, melted

½ tsp coconut oil

Directions

  1. Add cottage cheese to your food processor and blend until smooth.

  2. Next, add vanilla extract, 2 scoops of your favorite unflavored protein (This is mine, but you can use your fave), maple syrup, and almond flour, and blend again until smooth.

  3. Heat ¾ cup of chocolate chips in 30-second increments in the microwave or over a double broiler and add ½ tsp of coconut oil.

  4. Place parchment paper over a baking sheet and spread ½ of the chocolate in a thin layer. Freeze for 5 minutes.

  5. Next, add the protein mixture and spread evenly before topping with the rest of the melted chocolate. Freeze for 10 minutes.

  6. Cut long ways and then make 5 cuts shortways, you should have 12 total.

  7. Store these in the freezer for a late-night treat or a pre-workout boost.
