Citrus Watermelon Feta Salad

Ingredients

Dressing

  • 3 tablespoons honey

  • Juice from one lime

  • 1 teaspoon champagne vinegar

  • Pinch of salt

    Salad

  • 4 cups cubed watermelon, bite-sized

  • 1 cup sliced strawberries

  • 1 cup blueberries

  • 1/2 cup crumbled feta cheese

  • 1/3 cup mint leaves torn and sprinkled over top

Directions

  1. In a large bowl, whisk together honey, lime juice, salt, and champagne vinegar.

  2. Add the watermelon, strawberries, and blueberries to a bowl and toss to coat.

  3. Gently stir in the feta cheese, and mix before sprinkling with fresh mint.

  4. Refrigerate until serving. If you’re not eating this right away, keep the dressing separate until a few minutes before you’re ready to serve.
