Ingredients
6 chicken thighs, boneless/skinless
3 tablespoons olive oil
Juice from one lime
1 garlic clove, microplaned
1 tsp chili powder
1 tsp ground cumin
1 tsp dried oregano
½ tsp smoked paprika
½ tsp garlic powder
1 tsp kosher salt or to taste
(optional) herb salt
fresh ground pepper
Directions
Place your chicken thighs or breasts into a large bowl and add the olive oil, garlic cloves, lime juice, chili powder, cumin, oregano, paprika, garlic powder, salt and pepper.
Mix to coat the chicken, cover, and place in the refrigerator for 1-2 hours.
Once ready to grill, heat it up to 400 degrees F and cook them for 3 minutes each side until the internal temperature reads 160 degrees F.
Take the chicken thighs off the grill and place them on a clean plate. Give them 6-10 minutes to rest so that the internal temperature comes up to 165.
We enjoy these on salads, in bowls, on tacos, etc!
