Charred Corn Avocado Salsa

Ingredients

This salsa is one of my favorites to make in the summertime! Sweet smoky corn, creamy avocado, crisp cucumber, and juicy cherry tomatoes come together with bright lime juice and a simple seasoning for a dish that’s light, colorful, and packed with flavor. It’s quick to throw together, easy to customize, and perfect for everything from backyard cookouts to an afternoon snack with your favorite tortilla chips.

• 1 ear of corn charred
• 1 large avocado
• 1 cup cherry tomatoes
• 1/2 small red onion
• 1/2 medium English cucumber
• 2 tsp olive oil
• 2 tbsp lime juice
• 1 tsp salt, adjust to taste

1 tsp black pepper

¼ cup cilantro (optional)


Directions:

  1. Char ear of corn in a hot grill pan or direct flame, rotating every 45 seconds to a minute. Set aside and allow to cool.

  2. Chop all veggies and add to a bowl, slice corn kernels, and add them to the bowl.

  3. Dress with olive oil, lime, salt, and pepper before adding cilantro.

  4. Serve cold with your favorite chips
